Strawberry Curd Recipe

Strawberry Curd is perhaps a bit different, but the taste is strawberry through and through! Lovely on toast, crumpets or drizzled into plain yogurt.  Use if for a topping on cakes and cheese cakes.  Once you have tasted it, you can find many uses for it.

Ingredients

  • 500g Strawberries
  • 2 Large Eggs (We use our duck eggs, but hen eggs are fine too)
  • 60g of butter
  • 150g of sugar
  • Juice of 1 Lemon or 3 table spoons of Lemon Juice

How to make the strawberry curd

  1.  Put all the ingredients into a bowl and place the bowl on top of a simmering saucepan of water.  Alternatively the bowl can be placed into a simmering bowl of water.
  2. Stir the contents of the bowl until the sugar has dissolved (it no longer feels gritty on the bottom of the bowl)
  3. Continue to heat stirring from time to time until the curd thickens.
  4. When it thickens, poor the contents into clean sterilised jars.
