Strawberry Curd is perhaps a bit different, but the taste is strawberry through and through! Lovely on toast, crumpets or drizzled into plain yogurt. Use if for a topping on cakes and cheese cakes. Once you have tasted it, you can find many uses for it.
Ingredients
- 500g Strawberries
- 2 Large Eggs (We use our duck eggs, but hen eggs are fine too)
- 60g of butter
- 150g of sugar
- Juice of 1 Lemon or 3 table spoons of Lemon Juice
How to make the strawberry curd
- Put all the ingredients into a bowl and place the bowl on top of a simmering saucepan of water. Alternatively the bowl can be placed into a simmering bowl of water.
- Stir the contents of the bowl until the sugar has dissolved (it no longer feels gritty on the bottom of the bowl)
- Continue to heat stirring from time to time until the curd thickens.
- When it thickens, poor the contents into clean sterilised jars.
